Lately, I enjoy making “thong sui” (Chinese dessert) so much. The idea actually came from the dessert which I frequently buy from a dessert shop mainly selling “Kwai Ling Ko” (Tortoise shell-Rhizome jelly). This dessert is called “Snow Fungus with Rock Sugar” and it is very easy to prepare.
Snow fungus, also known as white tree ear fungus, cloud ear or white fungus. People have been saying that snow fungus is an alternative to expensive bird’s nest for the poor man. It contains much iron, vitamin C, calcium and phosphorus. It is often used in soups and desserts and believed to improve the complexion.
The fat and gum like protein in it is especially nourishing to the body. It is considered a good supplement to the body. Stew snow fungus with rock sugar lubricates the colon and stimulates peristalsis. Thus, it is a mild laxative for constipation patients.
Snow fungus is also said to be effective in nourishing the lungs, healing dry cough and clearing heat in the lungs. Those who have weak lungs catch cold easily. Eating stewed snow fungus with rock sugar and red dates helps strengthen the respiratory system and thus, helps prevent cold.
Usually I’ll just cook a big pot and store the desserts in a few containers so that me and my family can have it every day.
